Brioche French Toast

• 4 thick slices brioche or challah, ideally a day old
• 2 eggs
• 120 ml whole milk
• 1 tbsp sugar
• 1 tsp vanilla extract
• ½ tsp ground cinnamon
• Pinch of salt
• 2 tbsp butter
• Berries, powdered sugar and maple syrup, to serve

Method

1. 01Whisk the eggs, milk, sugar, vanilla, cinnamon and salt in a shallow dish until smooth.
2. 02Melt half the butter in a large nonstick skillet over medium heat.
3. 03Dip two slices of bread in the custard for 15 seconds per side, so they soak up the mixture without going soggy.
4. 04Cook for 3 minutes per side, until deep golden and slightly puffed. Repeat with the remaining butter and bread.
5. 05Serve warm with berries, a dusting of powdered sugar and maple syrup.
