Fluffy Buttermilk Pancakes

• 250 g all-purpose flour
• 2 tbsp sugar
• 2 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 480 ml buttermilk
• 2 eggs
• 3 tbsp melted butter, plus more for the pan
• 1 tsp vanilla extract
• Maple syrup, to serve

Method

1. 01Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl.
2. 02In another bowl, whisk the buttermilk, eggs, melted butter and vanilla.
3. 03Pour the wet ingredients into the dry and fold gently until just combined. A few lumps are fine. Let the batter rest for 5 minutes.
4. 04Heat a nonstick pan over medium heat and brush with butter.
5. 05Pour in about a third of a cup of batter per pancake. Cook for 2 minutes, until bubbles form and the edges look set.
6. 06Flip and cook for 1 minute more, until golden. Repeat with the rest of the batter and serve warm with maple syrup.
