Brown Butter Chocolate Chip Cookies

• 170 g unsalted butter
• 200 g light brown sugar
• 50 g granulated sugar
• 1 egg plus 1 egg yolk
• 2 tsp vanilla extract
• 250 g all-purpose flour
• ¾ tsp baking soda
• 1 tsp salt
• 200 g dark chocolate, chopped
• Flaky salt, for topping

Method

1. 01Melt the butter in a light-colored pan over medium heat, swirling, for 5 minutes, until it smells nutty and the solids turn golden brown. Pour into a large bowl and cool for 10 minutes.
2. 02Heat the oven to 180°C (350°F) and line two baking sheets with parchment.
3. 03Whisk both sugars into the butter, then whisk in the egg, yolk and vanilla until glossy.
4. 04Stir in the flour, baking soda and salt until just combined, then fold in the chocolate.
5. 05Scoop into balls about 3 tablespoons each and space them well apart on the sheets.
6. 06Bake for 11 minutes, until golden at the edges but still soft in the middle. Sprinkle with flaky salt and cool on the sheet for 5 minutes.
